Carrabba’s Italian Grill traces its roots to 1986, when Johnny Carrabba and Damian Mandola began sharing family recipes in Houston. That tradition continues in Macon under Proprietor Lester Gilbert, where the focus stays on familiar dishes prepared with care, from wood-fired favorites to classic pastas and desserts.

At the Macon location, longevity matters. Several cooks have worked together for more than two decades, giving the kitchen a steady rhythm shaped by experience and pride in the craft. Their consistency helps create an atmosphere that feels welcoming, unhurried, and rooted in teamwork.
