The Story

Max Gonzalez didn’t set out to open a brunch destination—it unfolded along the way. He began in kitchens at 15, bussing tables, washing dishes, and prepping at a local Italian restaurant before becoming a pizza chef with plans of opening a spot of his own. That vision brought him to the Island, where a pizza concept was underway—until curious passersby kept stopping in, asking for pancakes. Seeing the opportunity, Max pivoted, quickly building out a breakfast kitchen. Within a month, Garden Street Bistro was born. What started in January 2020 with pancakes and eggs has grown into a goto for breakfast, lunch, and brunch. Guests return for brioche French toast made in-house, Southern-style biscuits and gravy, and creative omelets with Hawaiian and Caprese fl air. In 2023, Max’s original vision came full circle with the addition of a pizza kitchen, now serving fresh, handcrafted pies alongside the daytime menu. Set in historic Fernandina, the space carries a relaxed, coastal charm—welcoming guests to slow down, settle in, and stay awhile.
