Almost eighteen years ago, Tina was diagnosed with Celiac
Disease, a revelation that would change her life. Convincing
her ‘sweet tooth’ that she could no longer enjoy the desserts
that she loved was nearly impossible. Attending events and
dinners without the ability to indulge in delectable treats was
disheartening, exacerbated by the lack of palatable gluten-free
options available. With a mission for change, Tina transitioned
careers, pursuing a pastry education. She first founded Thirteen
Desserts, a 100% gluten-free bakery, from her home. Through
relentless trial and error, she perfected recipes for cakes,
cheesecakes, macarons, and more, all crafted from scratch.
Driven by a larger vision, Tina aspired to establish North Florida’s first dedicated glutenfree bakery. In October 2022, her dream became reality with the opening of Thirteen
Dessert’s brick-and-mortar location in Fernandina Beach. Nestled in a quaint historic
home minutes from downtown Amelia Island, Thirteen Dessert Bar offers exquisite
wedding cakes, customizable confections, and a cozy venue for birthday celebrations.
Beyond baking, Tina aims to foster community through kids and adult decorating
classes. Guests can also indulge in homemade cheesecakes, specialty cakes, and
freshly baked cookies and cupcakes during business hours. With dedication and
